First on the list because I believe it is one of the absolute essential of french cuisine, It's very fun to prepare and I guarantee it will impress your friends.
A Julia Child favorite (you will find that we particularly love that woman here), Cod Filet Sauce Meunière highlights the simple flavors of fresh fish, butter, lemon and parsley. Clarified butterClaryfing butter is the process of melting the butter and skimming the milk solids which cause the browning to happen faster, also it evaporates the water in butter and allow higher frying temperature, which takes a few extra minutes to prepare, can take on heat without browning, making it ideal for pan-frying fish.

Did I mention Julia Child before? Yes, I did! what brought me to her in the first place is her fabulous Onion Soup recipe (link here). What makes Onion Soup incredible, it's the seemingly simple and precise steps involved. It is quite frankly impossible to fail. Onion, Beef Stock, Butter, Cheese, Toasted Bread and more Butter. What's not to love. You can choose the vegetarian option in the cart (vegetable stock instead of beef stock).

Entrecôte Sauce au Vin
Well, there it is les amis. This recipe integrates the most traditional techniques of french cooking with the one thing France is famous for (it was impossible to render a decent taste using bolts from the eiffel tower). Sweating shallotsSweating is the gentle heating of the shallots in butter, with regular stirring. It allows the shallots to soak in the butter while loosing theit liquid, wich produce stronger flavor., reducing wineReduction is the process of thickening and intensifying the flavor of a liquid mixture like wine by simmering it, here it evaporate the alcohol and the water, leaving the rich taste of the wine. and then reducing some more... Laurels, Thyme and Pepper all coming together in the reductions for a rich and delicious sauce. Oh... yes the entrecote as well :)
It takes some time for the sauce to come together, but it can be started well before the meat and need very little attention. So sip on a Bourgogne or Bordeaux while the magic happens.

The reason being is that it elevate the simple cooked in wine stew method to something close to an art form, and unlike Monet or Basquiat you will need no special talent or education to master it. What I love about the recipe is that it takes time, but you are never really rushed, so you can enjoyed a glass of wine with your friends while all the flavours come together effortlessly. Just start early or you will be eating quite late.
So what is in the Boeuf Bourguignon, well: Beef (you guessed that one), Carrots, Lardons, Onion, Garlic, Beef Stock, Tomato paste, Herbs (Thyme, Parsley, Bay leaves) and Champignons... oh, and Wine :) Yes that is a lot and it is intimidating but follow the recipe both video and printed-out in the box and you will be amazed how easy it becomes.

Like Fish Meunière, it is incredibly simple in its setting and yet everything comes together so perfectly. So, what is it exactly, a medium rare seared Tournedos placed on a butter fried slice of toast, topped with a slice of Foie Gras. The SucsThe Sucs are simply the cooking juices of the meat, they are extremely rich in flavor of the Tournedos with make a perfect base for a Garlic-Shallot-Parsley sauce that will nap the Asparagus/Green beans on the side.

About us

What is chez nicolas?

Us is me, Nicolas Legrand, an amateur cook from the region of Carcassonne in the south of France. I live in Tallinn for a few years now and i wanted to create an enjoyable experience of cooking where the hassle of choosing what to eat, going shopping and realising that you forgot the shallots is over.

I have selected 6 classical yet easy enough to prepare french dishes. All of them come with video recipe (forgive the accent) as well as clearly layered out printed recipe.

I brought special care in the packaging, first for the aesthetics and pleasure and second to minimise as much as possible the use of plastics. All the ingredients are shopped daily at the market for extra freshness.
